General high-speed discussion / ISO 1000 to 16000 how?

Hi, I use fluorescence microscopy applications and I need very high sensitivity and high fps. The 2.4 camera states 1000 to 16,000 ISO. Is this selectable or it depends on what to have maximum sensitivity? Thank you
